1 pack of frozen puff pastry
2 medium carrots
1 stick celery
1 medium yellow onion
2 Jalapeño peppers
Ghee or clarified butter
1 cup white wine
Kosher salt
Fresh ground black pepper
4 fat garlic cloves
1lb ground beef
1” piece of peeled ginger root*
1 tablespoonful turmeric
¼ cup of thick tomato paste
6 cloves*
2” stick of cinnamon*
½ teaspoon of fenugreek*
Ingredients:
(will make enough for 20 samosas, depending on how thin the
pastry is rolled out)
deseeded and finely chopped (this will of course add the hot
capsaicin; so amount to suit you)
(Gewürztraminer would be good but not essential)
Fat content your choice - also consider lamb.
Do use fresh whole spices whenever you can
If a recipe calls for ground spices then use a little electric coffeee grinder dedicated just to spices.
